Recipe: Chicken Burritos with Black Beans

This is a quick and easy burrito recipe for when your taste buds are in the mood for some healthy from South or the Border. Most chicken burrito recipes are made with flour tortillas, in this recipe we replace the flour ones and use a healthier "corn" tortilla which will be crispy like a flauta. In addition, these chicken burritos are baked rather then fried, which is always a much healthier alternative. The black beans in this Mexican treat are the true power-house of this recipe. Beans are packed with protein, important fiber, iron and calcium.

Ingredients

1 15 oz. can black beans, drained and rinsed

1 cup shredded rotisserie chicken breast

1/2 cup shredded low-fat cheddar cheese

1/2 tsp. cumin

1/2 tsp. pepper

1/2 tsp. sea salt

8 corn tortillas

Non-stick cooking spray

Directions

Preheat oven to 375 degrees F. Spray a large cookie sheet generously with nonstick cooking spray. Coat it well enough to see a thin layer of oil. In a medium-mixing bowl, combine black beans, chicken, cheese and spices. Divide mixture evenly among tortillas. Roll tortillas around filling and hold together with toothpicks.

Place on prepared cookie sheet. Spray tops of burritos generously with nonstick cooking spray. Bake 6 minutes. Turn burritos over and bake another 6-8

minutes, until golden. Remove toothpicks and serve.
